SMOKED  CURED CHEESE OF PURE SHEEP MILK ARDIONA "Type Idiazabal“

It is known as Idiazabal cheese, the milk comes from the milking of the "Latxa" sheep breeds.

The latxa sheep milk is one of the main factors that make the Roncal cheese distinguish itself from the rest. It is the native sheep of Navarre and Basque Country and is of prehistoric origin.  which It has maintained almost unchanged and has kept its original features.

It is primarily used for dairy products and has been adapted to the rugged geography in which it grazes. The sheelps main diet is natural fresh grass that grows in the mountains. It produces a limited quantity of milk, but of excellent quality, richness and aroma.

Idiazabal cheese is made with:
  • Pure sheep's milk, without being processed (it is raw milk and has no been pasteurized)
  • The rennet come usually from lamb's milk
  • A bath of salt and water
