  • Presentation: It is a ham that is reduced in salt and is recognized by the Spanish Heart Foundation. It is also called a ham of high yield because it takes full advantage of the piecel.
  • Curation: Formidable curation in cellar with a minimum period of  “12 months”.
  • Elaboración: Elaborado inicialmente si hueso y compactado de tal manera que la pieza queda sin defectos, generando una loncha uniforme.
  • Preparation: Prepared initially without bone and is compacted in such a way that the piece remains without defects, generating a uniform slice. This is done prior to curation.
  • Cut: Easy to cut by the absence of bone and skin, greatly facilitating machine cutting and thus be able to make perfect thin slices. Although it can also be cut by knife in taquitos(small cubes.
